How to make Crispy Bhindi (Stepwise)

Preparation :

Wash 500 grams of ladies' finger or bhindi (okra) thoroughly in water. After that, use a kitchen napkin to wipe them dry. Alternatively, you can spread them out on a big plate and allow them to air dry.

Before adding the spices to the bhindi, it should be completely dry. They shouldn't have any water dripping or moisture on them. Otherwise, they won't get as crispy as you would like.


Step-2

Take off the bhindi's base tip and crown. Cut the bhindi into four vertical pieces. Cut the bhindi into two pieces if it's small. Place the sliced bhindi on a big bowl, plate, or thali.


Step-3

Now, add the sliced bhindi with the following  spices, one by one:

  1. Half a teaspoon of ground turmeric powder
  2. One teaspoon of cayenne pepper, paprika, or red chili powder
  3. One teaspoon of ground coriander powder
  4. One teaspoon of ground cumin powder
  5. One teaspoon of amchur powder, or dry mango powder
  6. One teaspoon of chaat masala powder, with salt added if necessary

Step-4

Put the bhindi with ½ cup of gram flour (besan). You can also use chickpea flour in place of gram flour.Feel free to add a few tablespoons of rice flour for extra crispiness, even though I've only used gram flour.


Step-5

For 20 to 30 minutes, marinate the bhindi in this mixture. It's also yours to keep for an hour. They handle marination in this manner.

Step-6

Heat two to three tablespoons of oil in a pan or kadai (wok) to fry Kurkuri Bhindi. In batches, fry the bhindi, varying the amount according to the kadai's size. You can usually fry in three or four batches.

Add 2 to 3 tablespoons of oil to each batch. Add the first batch of marinated bhindi once the oil has heated to a medium-hot temperature.

Note that you can choose whether to deep-fry or shallow-fry the marinated sliced okra by adding extra oil. Depending on how you want to fry, change the amount of oil.

Step-7

To make sure even frying, keep rotating the bhindi frequently. To keep the oil at a constant frying temperature, you can reduce the heat if you see that it has gotten too hot.
